AROMATIC LEMON CHICKEN
AROMATIC LEMON CHICKEN
1kg chicken thighs (skin on)
1 x lemon (zest and juice)
1 tbl sp ground coriander
1 tea sp all spice
1 tea sp gr cinnamon
3 garlic cloves (minced)
Olive oil
1 cup greek yoghurt
Fresh chives (garnish)
Sea salt
Preheat oven to 200 degrees Celsius fan forced
Place heavy pan on high heat with a dash of olive oil. Bring to steaming heat and place your chicken thighs skin side down and char hard on the skin (4-5 minutes), before turning and charring non skin side for 2 minutes. Take off heat and place to the side.
In pan with rendered fat and oil, reduce heat to low and add in your lemon zest, ground coriander, all spice, cinnamon, garlic and sea salt and let its sizzle for a minute. Take off heat and add your lemon juice and bring all together to create your marinade.
In tray pour your marinade in and then add your chicken and coat with your hands, before facing skin side up. Pop into oven for 15 minutes (check with thermometer if you need longer) and then raise heat to high on grill setting to give it a final little char.
Remove from oven, serve with greek yoghurt and a pinch of sea salt, before adding some fresh chopped chives.
