ENGLISH MUFFIN PIZZA
English muffins can make an excellent alternative to traditional pizza bases, providing a quick and easy way to create personal-sized pizzas.
Growing up mum would let us as kids put together our own mini pizzas with toppings on english muffins, and there’s little moments like that, that really helped begin my cooking journey.
My recipe is a little more grown up with anchovies and garlic parsley oil, but honestly hits that pizza crazing so hard. Plus if you arrange it in a flower formation, you’ll create your own pizza that you can tear and pull each piece from, giving you a pizza placebo effect.

4 english muffins
3 garlic cloves (minced)
1 cup parsley leaves (finely chopped)
100-150gm pizza sauce
200gm shaved ham
16 anchovies
250gm mozzarella
Salt
Olive oil
Preheat oven to 200 degrees Celsius.
Start by halving the english muffins by using a fork to crowbar the pieces apart to create two slices. Drizzle with olive oil, place in a flower formation on a lined baking tray and put in the oven for 10 minutes to toast.
Make garlic parsley oil by adding minced garlic, chopped parsley and enough olive oil to cover. Mix together.
Once muffins are toasted, remove spoon on pizza sauce and spread, spoon on garlic parsley oil, layer on ham, add two anchovies to each and then finish with all the grated mozzarella to cover and connect slightly.
Place in oven and bake for 10 minutes before chucking it on grill to highest setting and grill until you have bubbly and charred cheese.
