GRANOLA


Granola is a popular breakfast and snack food made from a mixture of rolled oats, nuts, seeds, and often sweeteners like honey or maple syrup. It is typically baked until it becomes crispy and golden brown. I like to fill my recipe out with pepitas and dried figs, but absolutely have fun with adding whatever you like.

Granola is often enjoyed with milk, yoghurt, or eaten straight from the packet as a convenient snack. It is considered a healthy option due to its high fibre and protein content, making it a common choice for those seeking nutritious food alternatives. Keeping it healthy was important for my recipe which only uses honey for sweetness, and coconut oil to give it a crispy cook.

140gm coconut oil

150ml honey

1 tbl sp vanilla essence

400gm rolled oats

150gm pepitas

1 orange (zest)

Sea salt

15 dried figs (roughly diced)

Preheat oven to 150 degrees Celsius 

  1. Begin by placing your coconut oil, honey, vanilla essence and a pinch of sea salt into a pot on low heat and gently melt together.

  2. Whilst your wet ingredients are melting in a bowl place your rolled oats, pepitas and orange zest. Once your wets have melted together, pour over your dry ingredients and using a spoon bring altogether, making sure all the dry ingredients are evenly coated.

  3. Line a baking tray and pour your granola mix onto it, evenly spreading the entire width of the baking tray. Add into oven and cook for 45 minutes or until golden brown (depending on oven strength this could go for over an hour, just keep cooking but don’t burn), mixing mixture every 15 minutes to ensure an even coat. 

  4. Once oats are cooked, remove from oven and scatter your dried figs on top (you can also add any preferred dried fruit here or desiccated coconut, make it your own at this point). Let cool down and once cool place, crunch the oats up into pieces and place in container and leave at room temperature.
