PEACHES & CREAM ICE BLOCKS
800ml coconut cream
5 yellow peaches
3 tbl sp caster sugar
1 lime (juice and zest separated)
Honey
Optional: freeze dried plum powder
In a food processor add peaches, caster sugar and lime juice and blitz
into peach puree. Pour into bowl with coconut cream and whisk
together drizzling in honey as you go. Now keep adding honey and
whisking until you find your sweet balance.
Pour into ice block moulds and then finish with a sprinkling of the freeze dried plum powder. Pop into freezer overnight until completely firm, before finish with reserved lime zest.
